Lemony Grilled Salmon and Asparagus Pasta

Ingredients

  • 1 (1-lb) salmon fillet
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 (16-oz) pkg pappardelle pasta
  • 1 lb asparagus, cut into 1-inch pieces
  • 1 lemon
  • 1 (6.5-oz) pkg garlic herb spreadable cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat. Sprinkle fish with salt and pepper. Grill, covered, on lightly greased grill grate, 4 to 5 minutes per side or until fish flakes with a fork. Break fish into large pieces.
  2. Meanwhile, cook pasta according to package directions, adding asparagus during last 2 minutes of cooking. Drain, reserving ½ cup pasta water, and return to pot.
  3. Reduce heat to medium-low. Grate zest and squeeze juice from lemon into pot. Stir in cheese and enough pasta water to make a thin sauce. Cook 2 minutes or until thoroughly heated. Serve fish over pasta.
