Chicken-Avocado Power Bowls
- 1 (10-oz) pkg frozen cauliflower rice
- 1 (8.5-oz) pkg microwavable quinoa and brown rice
- 1½ cups shredded rotisserie chicken
- 1 (8-oz) pkg shredded lettuce
- 1 pint cherry tomatoes, halved
- 1 English cucumber, cut into bite-size pieces
- 1 avocado, sliced
- ¼ cup Sriracha mayonnaise
- ¼ cup chopped fresh cilantro
- Microwave cauliflower rice and quinoa according to package directions; toss together in a bowl.
- Divide rice mixture, chicken, lettuce, tomatoes, cucumber, and avocado among 4 bowls; drizzle with mayonnaise, and sprinkle with cilantro.
